There's not a lot more I love in this world than cheese (maybe with the exception of cured meats) & what is cheese without crackers! Most crackers on the market are filled with a million different ingredients including gluten & wheat which is not great if you are sensitive to either! These crackers are little nutrient bombs and are unbelievably easy to make- no dehydrator required! Flaxseeds are a great source of omega-3s. Nowadays we just simply aren't getting enough so it is good to sneak them into your diet whenever you can! Pumpkin seeds are also a star as they are high in protein, zinc and essential fats and can be a great addition to any diet. Pair these with some hummus or pesto for an afternoon snack, or use them as a healthier cracker alternative to accompany your wine & cheese on a Friday night. Because, balance, right? Makes 24 small crackers
250g pumpkin seeds 60g flaxseeds 100g sunflower seeds 2T psyllium husks 1T chia seeds 500mL water 1tsp salt 1T nutritional yeast (optional but makes them extra 'cheesy' & is a great source of B12 for you vegos/vegans!) 1. Preheat oven to 150 degrees (fanbake) 2. In a mixing bowl, combine all ingredients, leave to sit for 10 minutes to thicken. 3. Tip onto a baking paper-lined oven tray and spread out as thin as possible (around 4mm thick) and sprinkle light with some flaky sea salt. Bake for 30 minutes. 4. Remove from the oven and slice into crackers, then return to the oven to cook for another 20-30 minutes until crisp and golden. Remove to a rack to cool then store in an airtight container.
