'Healthy' baking whilst always delicious can sometimes have more sugar than the real thing! This slice however is actually pretty low in sugar (less than 2g per slice), tastes delicious and is super filling!! It freezes well so you can make it in bulk and then just pull it out when you feel like something sweet. If it lasts that long! Base:
In a food processor blend together salt, nuts and coconut until fine. Blend until oils are starting to be released. Add remaining ingredients. For those with a super sweet tooth you may like to add a tablespoon of your sweetener of choice (honey, rice malt syrup etc.) however I personally don't think it needs it! Press into a tin. Caramel layer:
Melt ghee in a pot, add all other ingredients (except peanuts). Pour it over the base, sprinkle over peanuts. Transfer to fridge for 1 hour. Topping:
Melt chocolate and coconut milk in a pan, pour over slice, return to the fridge for another hour. Cut into slices- enjoy!!
