This ice cream is seriously the best decadent treat!! Minimal ingredients and so easy to make! You'll need a ice cream machine, but I promise you you'll be making this more then once so it's totally worth it! Ingredients:
Ice cream: -1 1/2 C cashews (soaked in hot water for 1 hour) - 1 can full fat coconut cream (I use the Ceres Organics) -3T melted coconut oil -1/4 cup sweetener of choice (this makes an ice cream that is super creamy but not overly sweet- add more if you have a super sweet tooth!) -1tsp pure vanilla extract - generous pinch of sea salt Salted caramel: -1/2 C medjool dates (you can use dried dates but be sure to soak them in boiling water first) - Sea salt (to taste) 1. At least the night before, place your ice cream churning bowl in the freezer- it should be frozen solid (when you shake it should not make any sound). 2. Add all the ice cream ingredients to a blender and blend until ridiculously smooth. 3. Place mixture in a jar and refrigerate overnight- or alternatively place in the freezer for an hour or so. 4. Meanwhile make the 'salted caramel'. This is simply done by placing the dates and salt in a blender and blending until it forms a creamy paste. Add in 1-2T warm water if needed to help things get moving. 5. Add chilled mixture to ice cream maker and churn according to manufacturers instructions. When it is finished it will have the texture of soft serve ice cream. 6. Transfer ice cream to a freezer safe container, stir through salted caramel and freeze for a few more hours to firm up. You may want to take it out of the freezer 10 minutes before serving so that it can soften up!
