Courgette pasta is one of my absolute favourite things, I make it all the time as it’s just so quick and easy yet still so satisfying and amazingly delicious! You'll need a spiralizer but trust me it is well worth the investment! This recipe is super quick to chuck together if you come home late from work and chances are you will have all the ingredients in your pantry! Serves 2
Ingredients: -2 large courgettes (spiralized) - olive oil - 2 garlic cloves - 1T dried oregano - 1 red onion (finely diced) - 1 fresh red chilli (sliced finely, seeds removed) - 1/2 cup black olives - 2T capers - 2 large handfuls ripe cherry tomatoes - 1 large handful basil - 1 tin canned tomatoes - 2T balsamic vinegar Place a large frying pan over a medium–high heat. Add a good lug of olive oil, followed by the garlic, onion, oregano and chilli. Tear in the olives and stir for 2 minutes, or until the garlic and onion starts to turn golden. Add the cherry tomatoes, canned tomatoes and vinegar and cover with a lid. Cook for 6 to 8 minutes, or until the cherry tomatoes start to cook down slightly. Add the basil to the sauce along with the courgette noodles. Have a taste and season if needed. Transfer to a serving platter and top with a good shaving of fresh Parmesan. As you can see in the picture I topped mine with seared tuna but feel free to have it alone or with anything you please!
