ANZAC biscuits are my favourite biscuit of ALL. TIME. These are a much healthier version of an absolute classic. I have tried to keep them as similar to the real thing as possible as there is nothing more disappointing then being promised a delicious healthier version of a childhood favourite only to find they resemble the texture of a paper back book. Because of this they do still contain a small amount of oats and sweetener so are definitely a treat but life is all about balance and I'm not lying when I say these are as good as the real thing!! Dry ingredients:
Combine all of the dry ingredients in a food processor and pulse. Heat the coconut oil and sweetener in a pot until melted. Add vanilla extract and water. Add wet ingredients to the dry mixture and combine. Roll mixture into balls and place onto a greased tray- flatten out with a fork. Bake for 15-20 minutes at 150 degrees or until golden brown. Enjoy!
